125 - Finish CoCo v2 tests

• Move CoCo V2 IdP tests into the Entity Categories directory, see Finish CoCo v2 tests #125

I also made some filename changes to the existing IdP and SP tests.

Asking @stskjisc for review. Maybe Git check out the branch and make sure the checks all pass via the testbed(in addition to making sure the file move looks OK). Noting #125 ending up not being about adding or finishing the tests, the tests exist, but in a different directory.
