Dropping EOL Python 3.9 and therefore also bumping minimum required pytest to 7.0 as it was the first one with stated support for Python 3.10.
While this wasn't really necessary from the maintenance POV, this version bump allows us to drop a number of workarounds in the code and shrink the test matrix.
