FFmpeg 8.0.1 was released, so I updated the version.

Thanks for the PR. Unfortunately our ci ignores changes to the Jenkinsfile from third party devs so the test build pulled in 8.0 instead of 8.0.1. I'm going to merge this into an intermediate branch so the test can properly run on both arches before merging to master.
