chore: upgrade docs dependencies and fix build issues

Problem

• Documentation code block formatting was broken.

Solution

• Upgrade docs dependencies, specifically pymdown-extensions, to fix the formatting issues.
• Also upgraded mkdocs-material, mkdocstrings, mkdocs-glightbox, and mkdocs-llmstxt, and updated mkdocs.yml configuration to be compatible with mkdocstrings 1.0.0.
