[RNMobile][Monorepo] Mobile E2E Tests on Android

Description

This PR aims to get all mobile e2e tests working on the most up to date gb-mobile / gutenberg Monorepo branch (feat/import-gutenberg-mobile-no-squash)

This should cover the e2e Tests task of this master Monorepo PR - #18508, and supersede the changes in this existing Monorepo e2e tests PR - #18576

How has this been tested?

The following two commands should work, with all tests passing:

• npm run native test:e2e:android:local
• npm run native test:e2e:ios:local

Types of changes

This change is only fixing mobile e2e tests in the Monorepo branch

Checklist:
