Update mac tests

Mac doesn't contain .NET 6 by default now

@flytzen I found a task that might do what we need (install .NET 6) but it doesn't seem to run on Azure anymore for some reason so couldn't test it. What do you think about migrating to GitHub Actions?

Hi. Yes, I think that makes sense. Apologies, I do have an older issue assigned to me (I think) around this. I just hit a mad busy time at work that I am only just coming out of now.

No worries. Yeah this was brought up in another PR (#239), I was just doing some research around it since I assumed you'd gotten busy.
