Data Models don't level up, instead break through ceiling limit (200/6 kills registers as Faulty)

Pretty much what I said. I've done Enderman, Zombie, Skeleton, Ender Dragon, Wither Skeleton....all of them initially went past six, without leveling up. I was able to craft another Enderman / Wither Skeleton data model and get it to progress to Basic, but once I put it in the Simulation Chamber, the bar breaks out of it's bounds and goes straight up.

Happy for any thoughts or recommendations. Picking MC up after a few years hiatus, I'm a little rusty with the logs but can provide what's needed with some direction.
