CI tests with `test_Mock` for macOS and OpenSSL version compatibility CI hang

CMP HTTP server hang on startup while executing below command on macOS.
make -f Makefile_v1 test_Mock
Once the issue is fixed then we can enable the test in macos.yml workflow.

Basically the same holds for the OpenSSL version compatibility CI runs.
