Scientific Python Lectures infra revamp

This might have been rolled into #2, but I felt that there is enough work to be done to warrant a separate issue. There was previously some work done at the previous summits to start converting to MyST-JS (IIRC, @melissawm was leading it), but I am not aware of what happened afterwards. Does anyone remember the current state of scientific-python/summit-2024#2?

Thanks! Yes, after a conversation with @bsipocz, we can see that the migration is complete in scipy-lectures/scientific-python-lectures#846. It is done with JB1, however, and not JB2 – one bird at a time, I suppose 😄
