Add a Sort to field.Names

This should allow us to normalize SQL queries to make them cacheable and testable.

Update's call to UpdateBuilder.SetMap could be rewritten to use UpdateBuilder.Set. Our default field list will need to be provided in a stable order.

This hopefully can be addressed in Insert/Update/Delete.
