Can you clarify what kind of pad assignments you're referring to?

The MPC2000XL has program pads and physical pads. Program pads are A01, A02, etc. up to D15 and D16 -- 64 program pads. So that's 16 pads per bank, and there's 4 banks -- A, B, C and D. You assign note numbers to these program pads in the ASSIGN screen (Shift + 6, F1):

Then there's the physical pads. There's only 16 of those. VMPC2000XL, being a software emulator, allows users to configure a MIDI controller to interact with these physical pads. You configure that in the VMPC2000XL MIDI screen (a screen that the real MPC2000XL does not have, Shift + 0, F5):
