Update to 1.21.1 fabric + support for Sinytra Connector

I'll backport the 1.21.5 branch to a new 1.21.1 branch if I find time.
For the use of Sinytra Connector, I will look into that too.

I have yet to make a release on Modrinth or GitHub for 1.21.1, but it should be working, and its artifacts (containing the mod jar) can be found here, for now. It seems as though it should work with Syntra Connector out of the box? if it doesn't I can still look into it further.
I should be able to upload to morning and finish add the release in a few days or less, if all goes well.

I may test Sinytra connector support, it seems like it may work out of the box.
