`containerd_client` pulls in server side of `tonic`

Currently `containerd_client` uses `tonic` with defaults features, which includes the `server` feature (via `transport`) and `router`, ideally it would only enable the `channel` feature (and any of the other defaults it also needs). This would avoid pulling in in axum and other unneeded dependencies.
