Set up cookieless analytics for project websites

We would like some kind of statistics/analytics on how much services are being used. No cookies as those create a lot of privacy concerns.

At a quick glance, https://matomo.org/matomo-on-premise/ seems to be the only(?) major option with a free self-host offering.
