Add a subdirectory option for unbundle

Using the --type option to apply a secondary file extension doesn't offer as good of organization as I initially thought.

Now I'm considering adding a --type-dir or --subdir option instead. This would organize the output *.json files into their own directories, based on the field name provided to this argument.
