Update `mini_consumption` with new consumption data structure

ARTIS v1.1.0 changed the structure of the consumption table. Need to update all instances within exploreARTIS package where consumption is used.

• Rebuild mini_consumption
• Verify that visualization functions can work with new structure of consumption data table
• Update documentation if mentions consumption to align with new table structure
