[Feature Request] Simplify repo

Currently this repo is... a gods honest mess
I suggest we at some point when some sub folders like profiles can be moved create a layout like so:

|-data/ # Brands, like currently
|-stores/ # Stores, like currently
|-schemas/ # Schemas, like currently
|-webui/ # Webui source code, like currently
|-scripts/ # This folder contains all our python code, so it has the builder, import scripts, validator but also shared utils like python models and such 
|-[...] # Gitignores and such
