Remove the default submodules

Just explain in the documentation on how the submodules can be added and which ones need to be added plus an example to set up a CORDEX EUR-11 eval run. This also fits better to the renaming to WorkEngine, rather than "Getting Started". Mixing getting started with the workflow engine might be misleading.
