Preparing for REU 2021

I've added you to the repo. I would recommend making a fork of the repo, and using that to make edits for this year. At the very least the speaker info slide of each workshop needs to be updated. I would also update the M/F categorical data activity in the code along in the first workshop to something else. 
There are probably more ideas for changes in the readme.
