varying parameters when building a model

We would like to 'optimize' the building of a model by including more videos and changing parameters in a smart way. We think you mentioned the other day that we could actually test out several parameters and several values within one run of model building. Can you guide us through how to do this and what parameters and parameter-values would be most useful to try out. FYI, our recordings are of mouse and cricket and using 200 fps.
