[FEATURE] Convert Swagger docs to Scalar

What is the problem that this feature solves?
The Swagger docs are good, but the Scalar UI is nicer and it offers generated example code for clients which would help a lot for explaining how to use our API.

Replace Swagger with Scalar as described here:

How will this improve revenue or reduce our costs?
API usage is already hard to explain, making it easier would save us time.
